Stir-fry wraps

Easy n’ healthy recipes made with less than a teaspoon of oil but more than enough love!

Ingredients:

(serves 4)

A teaspoon of olive oil

500g Stir-fry vegetable mix (carrot, broccoli, Chinese cabbage, onions, spring onions, chives, asparagus)

2 tbsp grinded peanuts

1 tsp grinded sesame

4 cloves garlic, sliced

2 tsp ginger, sliced

1 onion, cut in long slices

½ tsp black pepper

3 tbsp chili tomato sauce (readymade)

1 tsp mango & sweet chili sauce (readymade)

Green chilies (optional)

4-6 flour tortillas

2 tbsp soy sauce

 

Preparation:

Grind peanuts and sesame into a mixture, leaving it a little crunchy.

Directions:

1. Put a teaspoon of olive oil in a large, shallow frying pan.

2. Add the sliced onion, garlic, and ginger and cook on full flame for two minutes.

3. Add the sesame seed and peanut mixture, and stir for one minute.

4. Add all the vegetables, and let cook for three minutes. Optional: Add green chilies for extra spice.

5. Mix 2 tbsp of chili tomato sauce and 1 tsp of mango and sweet chili sauce into the vegetables. Let cook for a minute.

6. Turn off the flame, and then add soy sauce, black pepper, and salt to taste.

7. Warm the tortillas on a shallow pan until soft.

8. Spread 1 tsp of chili tomato sauce evenly onto the tortilla, place the vegetables in the center, and fold over into a wrap.
