Ingredients:
1 tin of chickpeas
1/2 tin of kidney beans
1 small tin of sweetcorn
1/2 cup of sprouted beans
1/2 cup of sprouted moong beans (blanched in boiled water for 5 minutes)
1 red pepper, finely chopped
1 bunch of spring onions, chopped
1 red onion, finely chopped
season to taste with:
salt
ground black pepper
ground cumin
finely chopped green chilli
red chilli powder
lemon juice
extra virgin olive oil
freshly chopped coriander
Directions:
Mix all the ingredients in a large bowl. Makes a great lunchtime snack or picnic salad!
